Item Specifications

If top-shelf Henckels knives will break your bank, you can still get high-quality performance and construction with the mid-range Henckels Gourmet line. A full-size collection, this 18-piece set thoroughly outfits a chef, as well as eight steak dinner guests. Each Gourmet knife is stamped from a single piece of high-carbon stainless steel, honed by hand, and hardened by the Friodur ice process, for maximum strength and stain-resistance. These knives boast a full tang, which is triple-riveted to a contoured handle made of Novadur polypropylene. This construction is impact-resistant, comfortable to hold, and durable. Complete with its own storage block, the set includes a 4-inch paring knife, a 5-inch serrated utility knife, a 6-inch utility knife, an 8-inch chef's knife, an 8-inch carving knife, and an 8-inch bread knife, as well as a meat fork and eight steak knives. A 9-inch steel for sharpening and a pair of kitchen shears are also included. The set is safe for the dishwasher, but washing by hand is recommended. Henckels includes a lifetime warranty. --Emily Bedard

Item Specifications

The handles on Twin Signature cutlery feature the traditional three rivets and visible full tang, and are stylishly curved not only to feel good but look more contemporary. And, for a spot of color, the red Zwilling logo is permanently embedded in one side. Like all premium knives from Zwillings J.A. Henckels, the upscale partner of Henckels International, the Twin Signature blades are Friodur ice-hardened, made from high-carbon, no-stain steel, and are laser-sharpened for a durable edge. Stamped rather than forged, the knives do not feature bolsters, which makes them lighter than most.

This 19-piece set includes just about every knife a home chef could want, as well as a set of eight steak knives (non-serrated), a pair of kitchen shears, a nine-inch sharpening steel, and a solid hardwood block with a slot for every item. The knives consist of a 4-inch parer, 5-inch serrated utility, 5-1/2-inch boning, 6-inch utility, 7-inch hollow-edge santoku, 8-inch chef's, 8-inch serrated bread, and 8-inch carver. Made in Germany, the knives are covered by a lifetime warranty, and, while dishwasher-safe, Henckels recommends all fine knives should be washed and dried by hand immediately after use. --Ann Bieri
