Gunter Wilhelm Cutlery 201 Executive Chef 11-Piece Professional Knife Set with Wooden Storage Block

The Gunter Wilhelm 11-piece Executive Chef set is the ideal set for the home owner or professional chef. It includes 1 honing steel, a 10-inch chef knife, butchers cleaver, a 6 inch utility knife, Asian Cleaver, paring knife, Santoku knife, offset bread, meat carver and meat fork. In the beginning, knives were made from High Carbon steel. This was because High Carbon Steel was easy to sharpen and held an edge really well. The problem was that High Carbon would turn black quickly and was not attractive. The problem with Stainless Steel knives is that while they look great, they don t hold an edge and are almost impossible to sharpen. Then someone in Solingen Germany came up with an alloy which is the mixture of two steels, high carbon and stainless steel. This new alloy, called 440 was the answer to the problem. 440 hold an edge really well and sharpens easily while being very stain resistant. There are two basic kinds of knives in the world. The first is stamped where the knives are made from sheet metal stamping and then attach plastic or wood handles to the tang. Stamped knives have no bolster, and do not have the weight, balance and durability of Forged Style knives. Forged style knives are typically made from one block of steel and always have a Bolster. The Bolster is the large metal area joining the blade with the handle. Forged knives have better weight and balance than Stamped Knives. The best knives such as Gunter Wilhelm, are all of the forged style.

These knives boast a full tang, which is triple-riveted to a contoured handle made of Novadur polypropylene. This construction is impact-resistant, comfortable to hold, and durable. Complete with its own storage block, the set includes a 4-inch paring knife, a 5-inch serrated utility knife, a 6-inch utility knife, an 8-inch chef's knife, an 8-inch carving knife, and an 8-inch bread knife, as well as a meat fork and eight steak knives. A 9-inch steel for sharpening and a pair of kitchen shears are also included. The set is safe for the dishwasher, but washing by hand is recommended. The handles on Twin Signature cutlery feature the traditional three rivets and visible full tang, and are stylishly curved not only to feel good but look more contemporary. Henckels, the upscale partner of Henckels International, the Twin Signature blades are Friodur ice-hardened, made from high-carbon, no-stain steel, and are laser-sharpened for a durable edge. Stamped rather than forged, the knives do not feature bolsters, which makes them lighter than most.

This 19-piece set includes just about every knife a home chef could want, as well as a set of eight steak knives (non-serrated), a pair of kitchen shears, a nine-inch sharpening steel, and a solid hardwood block with a slot for every item. The knives consist of a 4-inch parer, 5-inch serrated utility, 5-1/2-inch boning, 6-inch utility, 7-inch hollow-edge santoku, 8-inch chef's, 8-inch serrated bread, and 8-inch carver.
